For this Ripasso we carry out the pressing and destemming of the grapes immediately after harvesting, and then proceed to fermentation with daily pumping over.
The refermentation on the marc of the Amarone takes place in January for about 14 days.
The aging takes place in Slavonian oak barrels and lasts 18 months.
